School lunch box, week 3

Oatmeal pancakes with homemade apricot jam

Onion-cheese wholewheat waffles

1 egg
200 ml milk
60 ml oil or melted butter
1 1\2 tsp sugar
1\2 tsp salt
1 c wholewheat flour + 1\4 tsp baking soda
100+ gr grated cheese (I used 250 gr mozzarella)
spices (fried onion, onion powder, garlic powder, cumin, black cumin, smoked soy flakes, pizza mix, dries chives - whatever you like)

Sweet buttermilk waffles

1 c buttermilk or yogurt
1 yolk
50 gr melted butter
vanilla extract
1\4-1\2 c sugar
1 c flour
1\4 c starch
1\2 tsp baking soda
1 egg white, well whipped (incorporate carefully into the dough)

Banana-apple muffins

125 gr butter
1 c sugar (cream with butter)
3 eggs
3 large very ripe (brown) bananas (I had 2 small bananas and 2 grated apples)
2 c flour (all-purpose or wholewheat) + 1\2 tsp baking soda + 1 tsp baking powder

Oatmeal pancakes

500 ml yogurt/ buttermilk
3 eggs
50 gr sugar
80 gr butter
2 c oatmeal flour + 2 tsp baking powder

School lunch box, week 2

I haven't had much time for cooking this week, but the kid still had some homemade food.

Fishburger, veggies, homemade oatmeal cookies for lunch and fruit cake for brunch (pic and recipe below)

Egg in a bun, veggies

Cheese&olive swirl (bought frozen), veggies

Egg in a bun, halloumi cheese, veggies, fruit cake for brunch

Sandwich (multigrain bread and cheese), veggies, apple strudel (bought frozen)

Oatmeal cookies 

1 egg
100 gr sugar
50 gr butter (melted)
1 tbsp honey
1 tbsp sour cream, thick yogurt or quark
220 gr oatmeal flour (I grind flakes)
70 gr wheat flour
1\2 tsp baking soda
1 tsp baking powder
nut, dried fruit, seeds, chocolate (I had peanuts and raisins)

Fruit cake


(for 24 cm spring form)
75 gr butter (melted)
300 gr quark or ricotta
3 eggs
225 gr sugar (whip eggs with it)
280 gr flour
3\4 tsp baking soda
1 tsp baking powder
fruit and\or berries (small berries can be left frozen)

School lunch box, week 1

The school year has started (finally!!!) and we decided the kid'd take his brunch and lunch from home. We don't have a good lunch box and insulated box (both will be from Ikea), so for now his lunches are cold.

A bottle (250 ml) of yogurt, veggies, egg and cheese baked in a bun.

Greek swirl with cheese and olive filling (bought frozen), veggies, a wholewheat crepe with sweet ricotta+raising filling, jam


A roll made of a buckwheat-wheat crepe and omelette, veggies, fried cheese, a wholewheat crepe with sweet ricotta+raising filling, jam

Fishburger (store-bought fish sticks, lettuce, pita), a wholewheat crepe with sweet ricotta+raising filling, jam

A buckwheat pancake with cheese + creamcheese, a corn pancake (gluten-free) with jam, veggies

Wholewheat pancakes

1 c milk
1 egg
1 c wholewheat flour + 1 tsp baking powder
1 tbsp sugar
30 gr butter (melted)
some salt

Buckwheat-wheat pancakes

1 1\2 c flour (buckwheat + wholewheat)
3\4 tsp baking soda
4 tbsp butter (melted)
1 egg
300 ml milk
2 tbsp lemon juice or vinegar
some salt and sugar

Corn pancakes

1 1\2 c corn flour (not starch!)
2 tsp baking powder
some salt
2 tbsp sugar
2 eggs
1 c milk
4 tbsp butter (melted)
